traceability at its most personal. produced by Mario Gomez on his family farm, La Soledad in Pitalito, Huila, this coffee is a shining example of how variety, process, and precision can come together in perfect balance. with Mario’s ability to isolate microlots and tailor their processing, it gives us access to coffees like this one - a very clean expression of a classic washed profile.

in the cup it's bright and structured, with the brown sugar sweetness of a perfectly timed roast, layered with dried tropical fruit and crisp red apple. we sourced this lot through Nordic Approach, who partnered with Kawa - a family-run exporter owned and managed by the same family behind La Soledad - ensuring full traceability, deep local insight, and quality control from farm to export.

resting our coffees

cafēn coffees are roasted to order. in the days that follow, freshly roasted coffee continues to evolve. as carbon dioxide gradually releases, the coffee begins to truly open up - harsh, roasty, or astringent notes soften, allowing a sweeter, cleaner, and more expressive cup to emerge.

resting gives the coffee space for its true character to shine.

we recommend resting our coffees for at least 14 days after the roast date. denser or high-elevation lots often reach their peak between 3 to 6 weeks.

Mario Gomez is the producer behind La Soledad, a single-estate farm in Pitalito, Huila known for its focus on varietal separation, clean processing, and traceable microlots. with varieties like Caturrón, Papayo, Sidra, and Pink Bourbon, Mario uses selective harvesting and tailored fermentation to unlock each lot’s full potential.

this coffee was exported by Kawa, the Gomez family’s own exporting company, and sourced through Nordic Approach, whose commitment to quality, sustainability, and transparency aligns closely with our own. Kawa operates as a certified BIC (Benefit and Collective Interest) company, working across Colombia to support small producers while maintaining rigorous quality and traceability systems - from farm to final cup.
