the best of high-altitude natural processing. this lot comes from the village of Buku Abel, one of the highest coffee-producing areas in Ethiopia, sitting at 2,350 masl in West Guji and grown by smallholder producers and processed at the Buku washing station run by Esayas Bareso.

cherries are selectively hand-harvested, carefully sorted, and slowly dried on raised beds before being prepared for export. the result is a fruit-saturated, expressive cup that speaks clearly of its place and process.

expect a vibrant and layered profile with apricot, cherry, lemon, bergamot, and orange, lifted by the nostalgic sweetness of hard-boiled sweets and rounded out with the indulgent depth of chocolate caramels.

resting our coffees

cafēn coffees are roasted to order. in the days that follow, freshly roasted coffee continues to evolve. as carbon dioxide gradually releases, the coffee begins to truly open up - harsh, roasty, or astringent notes soften, allowing a sweeter, cleaner, and more expressive cup to emerge.

resting gives the coffee space for its true character to shine.

we recommend resting our coffees for at least 14 days after the roast date. denser or high-elevation lots often reach their peak between 3 to 6 weeks.

farmers in Buku Abel cultivate local JARC-developed varieties 74110, 74112, and 74158, released in the 1970s for both quality and disease resistance. after harvest, cherries are delivered to the Buku washing station, where they’re sorted and naturally processed with care. we sourced this lot through Ally Coffee, who partnered with SNAP Specialty Coffee - a quality-driven Ethiopian exporter founded in 2008 by Negusse Debela.

inside Ethiopia’s Oromia region, West Guji is celebrated for its altitude, biodiversity, and cultural depth. the Oromo-speaking communities here bring unique traditions to farming, while the high elevation and heirloom varieties combine to produce some of the country’s most distinct and sought-after natural coffees. the Buku Abel farm, close to the Gedeo and Sidama borders, is a benchmark for vibrant, fruit-forward Guji naturals.
