beloved Finca Kafipamba is back with another gem: a roastery favourite and an exceptionally well-executed washed heirloom, with orange sweetness and brightness at the centre. it ripples into soft peach and prune-like depth, bringing a plush, rounded fruit character. the cup settles into silky milk chocolate before a long, deep honeyed sweetness and a very sweet, clean finish.

resting our coffees

cafēn coffees are roasted to order. in the days that follow, freshly roasted coffee continues to evolve. as carbon dioxide gradually releases, the coffee begins to truly open up - harsh, roasty, or astringent notes soften, allowing a sweeter, cleaner, and more expressive cup to emerge.

resting gives the coffee space for its true character to shine.

we recommend resting our coffees for at least 14 days after the roast date. denser or high-elevation lots often reach their peak between 3 to 6 weeks.

process

harvested cherries are selected by flotation, with floating beans removed before fermentation. the selected cherries are fermented in plastic tanks for 24 hours, then depulped and washed. once clean, the coffee is dried on African beds inside polytunnels, with regular movement to ensure even drying, before being packed in GrainPro bags at 10% moisture.

Finca Kafipamba is run by Jhon Ortiz and Nelly Morales in Palmitopamba, Pichincha, Ecuador. after many years in dairy farming, they began planting coffee in 2021 as a way to diversify their farm. with support from respected local producers, they established their seedbed, planting, harvest, and post-harvest practices, and now farm organically while continuing to learn and progress.
