intense and sweet from first sip: red-grape juiciness and jammy fruit, a pink-foam-candy lift, and a line of berry cordial over sweet dark chocolate. mellow, winey undertones round the finish. playful, dessert-like, and deeply satisfying.

resting our coffees

cafēn coffees are roasted to order. in the days that follow, freshly roasted coffee continues to evolve. as carbon dioxide gradually releases, the coffee begins to truly open up - harsh, roasty, or astringent notes soften, allowing a sweeter, cleaner, and more expressive cup to emerge.

resting gives the coffee space for its true character to shine.

we recommend resting our coffees for at least 14 days after the roast date. denser or high-elevation lots often reach their peak between 3 to 6 weeks.

process natural

cherries are harvested October-December at peak ripeness, then floated to remove low-density fruit. selected whole cherries dry on raised beds (wood/bamboo with mesh) for 20 days, turned every 20-30 minutes, shaded at midday and covered overnight. once the lot reaches 10-11% moisture, it rests in cool, ventilated storage on wooden-panelled floors before milling. this slow, careful drying lets the skin and mucilage develop the coffee’s fruit-sweet character.

sourcing

we sourced this lot through nordic approach, working with local exporter Tariku Kare. it was processed at the bensa setamo washing station in Bombe, Bensa (Sidamo) at 2100-2300 masl, a site that supports around 556 smallholder producers with drying infrastructure, quality protocols, and market access.

exporter Tariku Kare works across sidamo and west arsi as a quality-focused exporter with a clear community mandate. work opportunities are generated for the local citizens, especially women, and social welfare. beyond moving coffee, the team sustains 20 permanent roles and 650 seasonal jobs. they reinvest locally through school-material donations and targeted family support, and run on-farm training so smallholders can improve picking, processing, and drying to access specialty premiums. they also help local growers retail at the national level, widening market access and income stability.
