equinox is built around sweetness, structure and comfort, a coffee designed to feel familiar, satisfying and easy to return to. for the first release of equinox, we’ve selected a washed Esperanza produced by Diego Robelo at Aquiares Estate in Costa Rica. in the cup, cacao nibs and dulce de leche bring depth and sweetness, while soft strawberry and lemon verbena add gentle fruit and lift.

the result is rounded, sweet and composed, with a good body, balanced structure and a clean finish. comforting without feeling heavy, expressive without becoming too bright. equinox is a coffee to settle into.

resting our coffees

cafēn coffees are roasted to order. in the days that follow, freshly roasted coffee continues to evolve. as carbon dioxide gradually releases, the coffee begins to truly open up - harsh, roasty, or astringent notes soften, allowing a sweeter, cleaner, and more expressive cup to emerge.

resting gives the coffee space for its true character to shine.

we recommend resting our coffees for at least 14 days after the roast date. denser or high-elevation lots often reach their peak between 3 to 6 weeks.

why equinox?

equinox is inspired by autumn and the feeling we wanted this coffee to create: warmth, familiarity, sweetness and quiet ease.

rather than tying the name to a single origin or flavour profile, equinox represents a consistent experience. the coffee behind it may change with harvests and seasons, but the aim will remain the same: a sweet, rounded and dependable cup with enough complexity to stay interesting.

process

this lot is a washed Esperanza, a variety known for its sweetness, clarity and expressive cup potential.

after harvest, the coffee is carefully processed using the washed method, allowing the character of the variety and terroir to come through with clarity. the result is a clean and structured profile, where sweetness, body and acidity are held in balance.

for equinox, we selected this lot because it delivers the kind of sweetness and comfort we want from our core house coffee, while still offering enough complexity to remain interesting cup after cup.
