resting our coffees

cafēn coffees are roasted to order. in the days that follow, freshly roasted coffee continues to evolve. as carbon dioxide gradually releases, the coffee begins to truly open up - harsh, roasty, or astringent notes soften, allowing a sweeter, cleaner, and more expressive cup to emerge.

resting gives the coffee space for its true character to shine.

we recommend resting our coffees for at least 14 days after the roast date. denser or high-elevation lots often reach their peak between 3 to 6 weeks.

process

cherries from Worka Chelbesa are carefully hand-picked and delivered to the Danche washing station, where they are meticulously hand-sorted before processing. the selected cherries are pulped, then dried on raised beds until they reach ideal humidity. once dried, the coffee is hand-sorted again before being prepared for export, preserving clarity, citrus brightness, and the elegant structure of the washed process.

this coffee was grown by smallholder farmers in Worka Chelbesa, a kebele in Gedeb woreda at the southern edge of the Gedeo zone. the coffee was processed at SNAP Specialty Coffee’s Danche washing station, operated by Negusse Debela, which sources cherries from around 600 local farmers and produces washed, natural, and experimental lots with a focus on quality and precision.
