bright, sweet and fruit-layered, with apricot sweetness at the centre. blackberry and mango bring juicy depth, lifted by crisp green apple acidity and a delicate thread of coffee blossom, before settling into soft brown sugar.

resting our coffees

cafēn coffees are roasted to order. in the days that follow, freshly roasted coffee continues to evolve. as carbon dioxide gradually releases, the coffee begins to truly open up - harsh, roasty, or astringent notes soften, allowing a sweeter, cleaner, and more expressive cup to emerge.

resting gives the coffee space for its true character to shine.

we recommend resting our coffees for at least 14 days after the roast date. denser or high-elevation lots often reach their peak between 3 to 6 weeks.

process

cherries from smallholder producers in Worka Chelbesa are manually harvested, then hand-sorted at the Danche processing site before being pulped. the coffee is dried on raised beds until it reaches ideal humidity, allowing the honey process to preserve fruit sweetness, floral clarity, and layered acidity. after drying, the coffee is hand-sorted again before preparation for export.

this lot was grown by smallholder producers in Worka Chelbesa, a kebele in Gedeb, at the southern edge of Ethiopia’s Gedeo zone. the coffee was processed at SNAP Specialty Coffee’s Danche wet mill, operated by Negusse Debela, whose team works with local producers to process washed, natural, honey, and experimental lots with a focus on improving quality.
