deep and fruit-saturated, with strawberry sweetness at the centre. red wine brings plush, vinous depth, balanced by milk chocolate and caramel, with a bright lift of grapefruit cutting through the richness. rich, elegant, and layered, with polished anaerobic-natural expressiveness.

resting our coffees

cafēn coffees are roasted to order. in the days that follow, freshly roasted coffee continues to evolve. as carbon dioxide gradually releases, the coffee begins to truly open up - harsh, roasty, or astringent notes soften, allowing a sweeter, cleaner, and more expressive cup to emerge.

resting gives the coffee space for its true character to shine.

we recommend resting our coffees for at least 14 days after the roast date. denser or high-elevation lots often reach their peak between 3 to 6 weeks.

process

the Centroamericano H1 cherries are floated and washed with fresh water, but left whole for anaerobic natural processing. they are placed in a stainless steel tank fitted with a one-way air valve, where fermentation begins with the natural microorganisms and yeasts present on the cherries. as fermentation builds, oxygen is pushed out of the tank within one to two hours, creating an anaerobic environment. after a total fermentation time of 24 hours, the cherries are washed again with fresh water, then dried first for two days on a ceramic patio before finishing on layered beds inside the solar dryer.
