Finca Chelín Harrar honey x hydro-natural.

two coffees from Finca Chelín in oaxaca, Mexico: one a honey-processed harrar varietal, the other a hydro-natural geisha. tasted together, they show how carefully controlled processing can shift texture, fruit expression and florality while preserving cleanliness and structure throughout.

why these two?

we chose these coffees because they feel connected by intention. both are delicate, floral and precise in the cup, but they express those qualities differently through processing and varietal.

the Harrar honey leans toward crisp structure and vivid clarity: pink lady apple, raspberry and lemon peel carried by bright acidity and a tea-like profile. the hydro-natural Geisha feels softer and more expansive, layering apricot, magnolia blossom and white grape into a longer, silkier cup with greater fruit saturation and texture.

what makes the pairing particularly compelling is how transparent both processes remain. at Finca Chelín, processing is approached less through heavy fermentation and more through subtle control of resting, drying and oxidation. the honey process preserves freshness, precision and acidity, while the hydro-natural process introduces more rounded sweetness and floral depth without losing definition or cleanliness.

harrar - honey processed

a vivid and finely structured cup with remarkable clarity. crisp pink lady apple sweetness leads into fresh raspberry brightness and a delicate line of lemon peel acidity through the finish. florals sit lightly above the cup, giving lift and elegance without overpowering the fruit. We find the floral complexity opens up as the cup cools.

the harrar varietal itself is exceptionally rare outside east Africa, with this lot believed to be one of the only known cultivations grown beyond Ethiopia and Rwanda. at Finca Chelín, Enrique Lopez has cultivated the varietal with a focus on preserving floral structure, bright acidity and transparent fruit character, while allowing the terroir of oaxaca to shape its own expression.

process honey

cherries are harvested very ripe, deep red to purple in colour, before undergoing flotation sorting to remove lower-density fruit. after sorting, the cherries rest in concrete tanks for roughly 40 hours before depulping. drying begins under direct sun before continuing slowly under shade, allowing the coffee’s acidity, florality and fruit definition to remain precise and clean in the cup.

at Finca Chelín, honey processing focuses less on varying mucilage levels and more on carefully controlling resting time, oxidation and drying behaviour to shape flavour and structure.

geisha - hydro-natural

an expressive yet remarkably composed geisha with layered florals and refined juicy sweetness. soft apricot opens the cup before magnolia blossom and white grape carry through a long, sweet finish. compared to the harrar, the profile feels broader and more textural, with fermentation adding depth and softness while preserving the geisha’s delicate structure.

despite the more experimental processing, the cup remains exceptionally clean and poised. sweetness builds gently rather than intensely, allowing the florals and acidity to stay articulate throughout.

process hydro-natural

ripe cherries are harvested and rested before beginning a carefully controlled hydro-natural process designed to combine the fruit complexity of a natural with the clean finish of a washed coffee. after initial drying, the cherries undergo an overnight water soak before depulping and washing, helping preserve clarity while enhancing tartaric acidity and layered fruit character.

drying continues slowly under a combination of direct sun and shade-net drying to stabilise sweetness and structure, producing a cup that feels expressive, floral and remarkably clean.
