two Colombias; two naturals, both using dual-stage, yeast-assisted fermentation.

why these two?

both lots use double fermentation toward different ends, amplifying varietal character in your cup. motta’s yeast-assisted approach tunes sweetness, mouthfeel, and aroma without masking the pink bourbon’s tropical character. edinson’s carefully staged fermentations (with a targeted rehydration step) amplify the SL28’s red-fruit clarity and cocoa depth. side by side, they show how controlled fermentation can shape sweetness, texture, and aroma while honouring innate character.

Producer - Jefferson Adrián Motta | Motta Farm,

pink bourbon - dual-stage, yeast-assisted fermentation

tropical and silky: Tropical, lychee, mandarin, a hint of earl grey, nougat sweetness, long, silky finish.

ripe bink bourbon cherries are selectively hand-picked, then enter two controlled fermentations: first in whole cherry; after pulping, a second stage guided with a selected yeast to steer flavour development and absorption. time, temperature, and oxidation are closely monitored; the coffee is then gently finished, rinsed, dried to stable moisture, and rested before export.

a note on the producer

Jefferson Adrián Motta grew up in Huila’s coffee heartland and has turned Motta Farm into a small centre of experimentation. selective harvesting, multi-stage fermentations, and tight process control define his work, precision in service of clarity in the cup.

Producer - Edinson Argote | Quebraditas, Colombia

SL28 - natural, double fermentation

expressive and candy-like: cherry twizzlers, raspberry, blueberry, dark chocolate, expressive and layered.

fully ripe cherries are density-sorted, then undergo an initial 64-hour fermentation. the lot is dried 12 days to 20% moisture, rehydrated for 4 days with a specific yeast culture for 72 hours, then finished with a controlled dry. the coffee is stabilised before milling, built for vivid fruit, clarity, and a clean, lasting finish.

a note on the producer

at Quebraditas, varietals (Geisha, SL28, Ombligón and more) are kept separate and each day’s pick is processed as its own lot. field work is deliberate; in the mill, edinson favours designed fermentations, defined temperatures, selected yeasts, measured endpoints, followed by protected, even drying. the result is repeatable expression: clean sweetness, clear aromatics, and finishes that linger.

    the brewers we use and recipes are a starting point, a way to find the cup you like. feel free to switch brewers and adjust grind, ratio, and temperature to suit your taste and water. 

  • a quick note on our espresso recipes:

    we tend to enjoy our coffees at higher ratios with faster extractions; it brings more sweetness and clarity, softens bitterness, and lets the aromatics stay bright.
