structure x sweetness.

this month, we’re sending out two washed coffees with very different kinds of structure and sweetness.

one is a returning Kenyan favourite from Kirinyaga: bright, layered and intensely sweet, with black currant, lemon curd and the refinement of black tea. the other is a clean and elegant Ecuadorian heirloom from Finca Kafipamba, with orange brightness, prune-like depth, soft peach and silky milk chocolate.

together, they make a really interesting pairing for August: one vibrant, complex and deeply layered; the other softer, sweeter and more composed.

these two coffees show how much range there can be within washed processing. both are clear and sweet, but each expresses that clarity in its own way: Baragwi through vibrancy, acidity and layered complexity; Kafipamba through softness, balance and quiet sweetness.

as always, we recommend giving both coffees a little rest before brewing. they’ll continue to open up over the coming days, with more sweetness, clarity and structure as they settle.

Baragwi Farmers Cooperative Society | Kenya

washed

Baragwi Guama AA is a returning favourite from Kirinyaga, Kenya.

this lot was produced by smallholder farmers delivering to Guama Factory, which forms part of the Baragwi Farmers Cooperative Society. grown in the nutrient-rich highlands of central Kenya, the coffee brings together several classic Kenyan varieties, including SL28, SL34, Ruiru 11 and Batian.

the coffee is processed using a traditional Kenyan washed method. after harvesting, cherries are hand-sorted, pulped and fermented overnight before being washed, graded and dried on raised African beds.

this process helps highlight the qualities we love in washed Kenyan coffees: clarity, brightness, structure and complexity.

in the cup, Baragwi Guama AA is bright, layered and very sweet. Black currant brings depth and juiciness, lemon curd adds a bright citrus sweetness, while black tea gives the cup a refined, elegant finish and added complexity.

clean and vibrant, with a lingering complexity and a beautifully structured acidity.

our second coffee this month comes from Finca Kafipamba in Pichincha, Ecuador.

produced by Jhon Ortiz and Nelly Morales, this washed heirloom lot offers a very different expression of clarity. where Baragwi is vivid and intensely structured, Kafipamba feels softer, rounder and more quietly composed.

in the cup, orange brings brightness and lift, while peach adds soft fruit sweetness. prunes bring depth and a gentle dried-fruit character, balanced by a smooth milk chocolate finish.

it’s clean, sweet and elegant, with a composed structure and a rounded sweetness that makes it easy to return to.

    the brewers we use and recipes are a starting point, a way to find the cup you like. feel free to switch brewers and adjust grind, ratio, and temperature to suit your taste and water.

    we tend to enjoy our coffees at higher ratios with faster extractions; it brings more sweetness and clarity, softens bitterness, and lets the aromatics stay bright.
