summer signature cold brew

a refreshing cold brew topped with silky cardamom cold foam and a hint of lime.

for this recipe, we recommend Las Hermanas Red Catuaí from Costa Rica. Its natural process gives the coffee more body and complexity, making it a perfect base for cold brew.

some coffees lend themselves perfectly to a seasonal signature serve. Las Hermanas has a rich, fruit-forward sweetness that works beautifully as a cold summer drink. we’ve been playing with it as a refreshing signature serve built around cold brew, ice, lime and a soft cardamom finish.

The result is bright, cooling and incredibly moreish:

 

cold brew:

ingredients

  • 75g Las Hermanas Costa Rica coffee, coarse grind
  • 900g soft, room-temperature water

We use a slightly stronger concentrate for this recipe.

method

  1. combine the coffee and water in a cold brew brewer or container.
  2. place in the refrigerator and steep for 16 hours.
  3. remove the filter and coffee grounds.

 

cardamom cold foam:

ingredients

  • 70g whole cream, 30-36% fat
  • 20g sugar (vanilla extract in the cold foam could be a great substitute)
  • 30g cardamom milk
  • optional: a small amount of vanilla extract for a sweeter foam

To make the cardamom milk, infuse 30g milk with 1g ground cardamom overnight, approximately the seeds of 5 cardamom pods.

method

  1. add all ingredients to a milk foamer.
  2. foam until smooth and silky, around 30 seconds in a foaming machine.


build the drink:

ingredients

  • 4-5 medium ice cubes
  • A squeeze of fresh lime juice, around 2-3g
  • 150ml Las Hermanas cold brew
  • 40g cardamom cold foam
  • Optional: orange zest

method

  1. add the ice cubes to a serving glass.
  2. squeeze a small amount of lime juice over the ice (this enhances the drink’s complexity and brightness).
  3. pour in 150ml of Las Hermanas cold brew.
  4. gently top with 40g of cardamom cold foam.
  5. optional: finish with a little orange zest over the cold foam.
  6. serve and enjoy.
