JR Orange Bourbon espresso tonic

a bright espresso tonic with orange sweetness, lime lift, rosemary aromatics and a soft orange honey foam.

for this recipe, we recommend JR Orange Bourbon for the coffee, and a Mediterranean tonic. it tends to be lighter, more citrus-led and more floral than Indian tonic, which helps lift the coffee without overpowering it.

the result is bright, sparkling and citrus-led - orange sweetness from the coffee, lime and Mediterranean tonic bringing lift, rosemary adding a gentle herbal aroma, and a soft orange honey foam giving the drink a delicate aromatic finish.

 

espresso:

ingredients

  • 1 espresso shot of JR Orange Bourbon
  • ice, for chilling

method

  1. pull a shot of espresso of JR Orange Bourbon - our recommended recipe is 17g in and 38g out in around 22 seconds.
  2. add a few ice cubes to a small glass or jug.
  3. pour the espresso directly over the ice.
  4. stir gently for 5-10 seconds, just until the espresso feels cold.
  5. strain the espresso into a clean cup, leaving the ice behind.
  6. set aside while you build the drink.

 

orange honey syrup:

ingredients

  • 15g honey
  • 15g warm water
  • 1 strip orange peel, ideally with as little white pith as possible

method

  1. use a vegetable peeler or small knife to remove a strip of peel from an orange. Try to avoid too much of the white pith, as this can taste bitter.
  2. add 15g honey to a small cup or bowl.
  3. add 15g warm water. The water should be warm enough to dissolve the honey, but not boiling.
  4. stir until the honey has fully dissolved into the water.
  5. add the strip of orange peel to the syrup.
  6. leave it to infuse for 10–15 minutes.
  7. remove the orange peel.
  8. let the syrup cool, then place it in the fridge until cold.


build the drink:

ingredients

  • 4-5 medium ice cubes
  • 120ml Mediterranean tonic water
  • 1 small sprig of rosemary
  • 1 chilled double espresso
  • 15g orange honey syrup
  • Optional: orange zest

method

  1. pour in orange honey syrup to the bottom of the glass.
  2. fill a tall glass with 4-5 medium ice cubes.
  3. pour 120ml Mediterranean tonic water over the ice. Pour slowly to keep as much carbonation as possible.
  4. gently twist and squeeze the rosemary between your thumb and index finger to release its aroma, then add it to the tonic.
  5. slowly pour the chilled espresso over the tonic. Pouring gently helps create a soft layered effect.
  6. finish with a little orange zest if you like.
  7. serve straight away while the drink is cold, bright and sparkling.
