advanced washed x advanced natural.

two sidra lots from el diviso in huila, colombia: one processed through an advanced washed process, the other through an advanced natural fermentation. tasted together, they show how fermentation, oxidation and drying can radically reshape texture, sweetness and fruit character and amplifying what the sidra varietal is known for.

why these two?

we chose these coffees because they represent two remarkably controlled expressions of modern colombian processing. both coffees undergo highly intentional fermentation and drying protocols, yet they arrive in the cup with entirely different personalities.

the advanced washed sidra leans toward structure and precision: lemongrass, caramelised sweetness, red apple and soft red fruits carried by a citric acidity. the advanced natural sidra moves in a more saturated direction, building strawberries-and-cream sweetness, white chocolate and vanilla into a silkier, sweeter and more rounded cup.

what makes the pairing especially compelling is that both coffees still feel transparent despite the complexity of their processing. at finca el diviso, fermentation is approached less as spectacle and more as refinement; carefully managed oxidation, submerged fermentation and drying are used to shape texture and sweetness while maintaining balance and clarity.

process

only fully ripe cherries are hand-selected before being disinfected, floated and manually sorted to ensure consistency and quality. whole cherries first undergo a 14-hour oxidation stage designed to build complexity before depulping.

the coffee then moves through a 60-hour anaerobic fermentation followed by a 12-hour submerged fermentation using cultivated must from previous batches to intensify sweetness, texture and depth. drying is carried out slowly under constant monitoring at temperatures below 38°c until stable moisture is achieved.

the farm El Diviso, led by Néstor and Adrián Lasso alongside Jhoan Vergara near Pitalito, Huila, has become one of the defining names in modern colombian coffee. over the past five years, the farm has developed highly advanced fermentation protocols in collaboration with cata export, earning recognition across europe and helping reshape perceptions of colombian specialty coffee worldwide. 

the work happening at El Diviso reflects a broader shift within Colombian coffee: producers moving beyond traditional processing into highly intentional fermentation and flavour development. what distinguishes Néstor Lasso’s coffees is not simply technical complexity, but restraint; processes are designed to enhance structure and expression rather than overpower the coffee itself.

ripe sidra cherries between 24-28 brix first undergo controlled cherry oxidation before entering a staged anaerobic fermentation at carefully managed temperatures. additional oxidation and submerged fermentation follow, alongside recirculation of fermentation leachates to build complexity and texture.

after fermentation, thermal shock is applied before drying begins. the coffee is partially dried, rested in darkness, then rehydrated and blended with fresh cherries prior to depulping; a highly controlled process designed to amplify sweetness, creaminess and fruit saturation while preserving clarity and stability in the final cup. drying is completed mechanically until the coffee reaches stable final moisture.

    the brewers we use and recipes are a starting point, a way to find the cup you like. feel free to switch brewers and adjust grind, ratio, and temperature to suit your taste and water.

    we tend to enjoy our coffees at higher ratios with faster extractions; it brings more sweetness and clarity, softens bitterness, and lets the aromatics stay bright.
